It makes sence if you think of it as “grey”. It’s unfortunate that they kept the terminology from the first game instead of just having things start out as grey generally and acknowledging that it is a color in its own right

my 2 - well, 3, actually - cents:

art / lore: If you ignore our benevolent employer’s (;-)) instructions and (gasp!) dare look at the un-color, you might find that… my ∗∗∗, it’s full of stars! Which I find poetic since the asteroids came from the stars.

conceptual: I like to just think of it as a kind of paint remover
(which weirdly has the same viscoelastic properties as paint - but maybe not that surprising, seeing how it was created by some physical or chemical reaction while trying to cram too much white paint into a small space).

practical: IMHO it makes getting clean shapez for e.g. MAMs much faster/easier so I can get back to tinkering with belts and gems :-). And you could always just not use it?

PS: If you mean from a color mixing perspective, I fully agree that it feels like a bit of a clutch; OTOH so does mixing white+white to get black :-D
